Let’s start with the traditional and memorable dish, which we have loved since childhood:
Cozonac with candied fruits and aronia

Fluffy, tasty, and with that characteristic aroma that awakens many precious memories, it’s hard to imagine Christmas without homemade cozonac.
This time, however, we’re not making it with poppy seeds or Turkish delight, but with plenty of candied, vitamin-rich fruits.
Alongside them, we add aronia fruits and thus obtain a healthy and delicious cozonac. Here’s how to prepare it. 🙂
Ingredients used
For the dough and filling:
- 150g sugar;
- 270ml milk;
- 100ml oil;
- 500g flour;
- 80g dried aronia fruits;
- 80g candied lemon peel;
- 80g raisins;
- 80g candied ginger;
- 80g candied cherries;
- 4 egg yolks;
- 1 vanilla extract;
- Zest of one lemon/orange;
- Salt.
For the starter (maia):
- 100ml milk;
- 100g flour;
- 1 tablespoon sugar;
- 25g fresh yeast / 10g dry yeast.
Steps required:
- We start with the starter, for which we put lukewarm milk in a bowl and add the yeast. Then, we add the sugar and mix.
- Once the yeast dissolves, we also add the flour. And we mix just enough to form a dough.
- We let the dough rise for about 20 minutes, until it doubles in volume.
- Once the starter has risen, we put the sifted flour in a large bowl and add the starter over the flour. Then we add the powdered sugar and the 4 egg yolks.
- We also add the lemon zest and the vanilla extract, along with salt – for taste.
- We mix the entire composition, gradually adding the lukewarm milk. Then, we mix the dough very well.
- We gradually add the oil and start kneading for about 20 minutes.
- Then, we take the dough out of the bowl and knead it for another 10 minutes. (We can also do this using a stand mixer.)
- We place the dough in an oiled bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour/until it doubles in volume.
- Now we move on to the candied fruits, which we mix in a bowl.
- When the dough has risen, we turn it onto an oiled work surface and cut it in half. We take one half, flatten it, and roll it out.
- We place the candied fruits over the dough and press them in very well.
- We carefully roll up the dough.
- We repeat the process with the other half of the dough.
- We braid the 2 halves and place them in a well-greased baking pan.
- We let the cozonac rise in the pan for 20 minutes.
- Then, we brush the cozonac with beaten egg. We sprinkle brown sugar over it. And we put it in the preheated oven at 165 degrees, where we leave it for 40-50 minutes.

Vegan Mousse with Aronia

If you want to try something different for Christmas, which impresses with both taste and appearance — you won’t go wrong with this.
It’s relatively easy to prepare, with the ingredients and steps below.
Ingredients used:
- 140g raw cashews, soaked in water for at least 30 minutes;
- 140g dried aronia fruits;
- 1 tablespoon lemon juice;
- 1 pinch of salt;
- 60ml hot coconut milk (or other plant-based milk);
- 2 tablespoons melted coconut oil;
- 1 drop of vanilla extract.
Steps required:
- Hydrate the aronia fruits for 3 hours or overnight.
- Remove the cashews from the water.
- Add the ingredients to a blender in this order: aronia fruits, cashews, lemon juice, salt, hot coconut milk, and vanilla.
- Start blending at low speed. Then, gradually increase the speed.
- Once the mixture looks uniform, stop the blender and pour in the melted coconut oil. Mix again for 30 seconds.
- Pour the mousse into 4 containers and garnish as desired.
- Chill for 2 hours and then serve to the whole family. 🙂

Danish Braid with Aronia

It’s the Danish braid with aronia — a perfect mix of taste, texture, and design.
It is prepared as follows.
Ingredients used:
- 450g flour;
- 200g aronia jam;
- 21g fresh yeast;
- 3 tablespoons sugar;
- 200ml lukewarm oat milk;
- 60g vegan butter at room temperature;
- 1 teaspoon salt.
For the glaze:
- 80g powdered sugar;
- 3 tablespoons vegan cream;
- 1/4 teaspoon vanilla extract.
Steps required for dough preparation:
- Gently warm the oat milk.
- Place the flour in a bowl and add the crumbled yeast, sugar, and 3-4 tablespoons of oat milk.
- Cover with a little flour, then set the dough aside for 15 minutes.
- Add the remaining milk and butter. Knead the dough for 5-8 minutes.
- Cover the dough and let it rest for 1 hour in a warm place.
- Turn the dough out onto a floured surface.
- Roll out the dough into a rectangle using a rolling pin. Then, spread the aronia jam evenly over it.
- Roll up the dough and cut the roll in half lengthwise.
- Braid the 2 halves.
- Place the braid in a circular shape – in a round baking pan. Cover it and let it rise for 40 minutes.
- Preheat the oven to 180 degrees. Brush the braid with oat milk and bake for 40-50 minutes.
- Let it cool in the pan for 5 minutes.
Steps required for glaze preparation:
- Make the vanilla glaze by mixing the glaze ingredients until smooth.
- Remove the braid from the pan and cover it with the vanilla glaze.
- Cut into pieces and serve a special dessert perfect for the holidays.
