Ingredients used:

  • 340g rolled oats;
  • 380g flour;
  • 100g coconut sugar;
  • 100g brown sugar;
  • 70g ground toasted hazelnuts;
  • 1 teaspoon baking powder;
  • 1 pinch of salt;
  • 300g margarine (or butter);
  • 2 jars of aronia jam.

Steps required:

  1. Preheat the oven to 160°C.
  2. Take a large bowl and mix the rolled oats, flour, coconut sugar, brown sugar, toasted hazelnuts, baking powder, and salt.
  3. Melt the margarine and add it to the dry ingredients. Mix until you get a texture similar to granulated breadcrumbs.
  4. Line a small baking pan with parchment paper. Put 2/3 of the obtained mixture into the pan. Then press the dough on the bottom and sides of the pan to create a solid “crust”.
  5. Place the pan in the preheated oven and bake for 10 minutes at 160°C.
  6. Remove the pan from the oven, add the aronia jam, and sprinkle the remaining crumbled dough on top of the filling.
  7. Place it back in the oven and bake for another 25 minutes (or until the dough on top is golden brown).
  8. Remove the pan from the oven and let it cool.
  9. Once completely cooled, cut everything into bars.

  • 200g butter, melted.

Steps required:

  1. Blend the aronia berries and mint leaves until you get a smooth mixture.
  2. Take a separate bowl and mix the Mascarpone and brown sugar well.
  3. Add the aronia berry mixture to this bowl and mix gently.
  4. Now we make the bottom layer, onto which we will pour the mixture. For this, prepare a cake pan, which you cover with parchment paper. Then, combine the butter and biscuits, pressing them lightly into the cake pan. Then flatten them with your hands throughout the pan, creating a smooth and even layer.
  5. Add the aronia berry mixture over it and let it chill in the refrigerator for at least 2 hours.
