This year, we started harvesting the aronia fruits much later than in previous years — right at the end of August.
It was an important decision for us, which had 2 results:
- The production quantity decreased by 20-30%;
- But the quality increased considerably.
Why do we say that?
Because aronia fruits are like grapes, and aronia juice is like wine.
They require an optimal harvesting period and a perfect Brix level — a value that determines the health & shelf-life of fruits — to obtain quality juice.
2021 was a capricious year, which is why the fruits did not ripen at the right time.
As a result, we decided to postpone harvesting until we were sure we were obtaining the quality that all our customers know.
We gave up about 30% of production for superior quality
Postponing the harvest cost us at least 20-30% of our production, but we have always followed the principle of quality over quantity.
Most aronia producers in the country harvested much earlier and started selling juice and fruits as early as August. But at what quality?
Haste spoils the work, as the saying goes. And we decided not to rush.
Instead, we chose to lose approximately 20-30 tons out of 100 tons of fruit to achieve better quality.
Many factors were behind this decision. But the most important were respect for you, our customers, and respect for our own business.

we process FRUIT BATCHES
several times a year
The process works like this:
- We harvest the fruits;
- We quickly freeze them at -40°C;
- We store them in the cold room;
- We process them in different batches throughout the year to produce and deliver only fresh juice.
Few people know this, but the secret to freshness lies in the extra-fast freezing of the fruits immediately after harvesting.
The faster the freezing, the better. Thanks to it, we can best preserve the nutrients in the fruits without waste.
With slow freezing, however, the water in the fruits forms crystals that break the cell walls and membranes within them.
Thus, even though the fruits appear to be frozen, upon thawing they will become mushy and all the juice will leak out. This happens because the membranes that held the juice inside are no longer intact.
