- 200g soft butter;

- 500g flour;
- 1 sachet baking powder;
- 1 teaspoon vanilla extract;
- Salt;
- Ground nuts (optional).
Steps:
- Place the soft butter (at room temperature) in a large bowl, add the sugar, vanilla, and a pinch of salt. Mix them with a spoon or mixer.
- Add the egg and egg yolk to the bowl, then mix again.
- Sift the flour with the baking powder and add them to the bowl. Mix everything with a spoon until the dough becomes consistent.
- Take a quarter of the dough, wrap it in film, and put it in the freezer for 15-20 minutes.

Ingredients:
- 40g powdered sugar;
- 110g butter (65% fat);
- 165g all-purpose flour;
- 1 egg yolk;
- 1 teaspoon baking powder;
- 1 pinch of salt;
- 1 teaspoon vanilla extract;
- 1 jar of aronia jam (for filling).
Steps:
- Cream the egg yolk with the sugar in a bowl.
- Add the butter (at room temperature) and mix well.
- Sift the flour and mix it with the baking powder and salt.
- Add a teaspoon of vanilla extract to the cream made from butter, sugar, and egg. Then, add the flour and baking powder to the bowl.
- Mix everything well until you get a soft, non-sticky dough.
- Form a large ball with all the dough, wrap it in plastic wrap, and refrigerate it for at least 2 hours.
- Now let’s start baking the cookies. To do this, preheat the oven to 190 degrees Celsius and prepare a baking sheet with parchment paper.
- Take the dough out of the refrigerator and divide it into two. Put one part back in the refrigerator, and start making cookies with the other part.
- Flour your work surface and roll out the dough with a rolling pin.
- Cut out circles using special metal/plastic cutters that we have in our kitchen. (If you have bunny, star, or egg-shaped cutters, even better.) Then, place them on the baking sheet. Gather the remaining dough after cutting and roll it out again to cut more circles. Repeat the process until all the dough is used.
- Bake the cookies in the oven for about 15 minutes. The cookies are ready when they start to brown on the bottom.
- While the first batch of cookies is baking, make new ones following the same steps. This time, however, cut a small circle in the center of each cookie using a special cutter.
- Place the new cookies on the baking sheet and bake them the same way as the first batch.
- After the cookies have cooled, start spreading the ones without holes with aronia jam. Then, place the ones with holes on top of them.
- Refrigerate the assembled cookies until the next day.
- Take the cookies out of the refrigerator and dust them with vanilla powdered sugar.
